Mixed Vegetable Pickle


Ingredients:

Raw Mango – ½

Cucumber -  ½

Carrot – 1

Green chili – 3 nos.

Fenugreek seeds – ½ tsp

Salt – ½ tsp

Turmeric Powder – 1/2 tsp

Mustard seeds – 1 tsp

Asafoetida – pinch

Gingely oil – 3 tbsp.

Procedure:

·        Chop the mango,carrot,cucumber into small pieces and set aside in a bowl.


·         Now add the fenugreek seeds,mustard seeds,turmeric powder,chopped green chili,salt and mix well.



      In a pan heat up the gingely oil add asafetida and pour the oil into the bowl of mixed vegetable and other ingredients.



·        Let it rest for 30 mins.Now yummy spicy pickle is ready to be served with Chapathis & Parathas
