Sweet Kozhukattai


Ingredients:

Rice flour – 11/2 cups

Water – 2 cups

Oil – 4 tsp & oil to use while making the dumplings

Salt- pinch

Grated coconut – 1 cup

Jaggery – ¾ cup

Procedure:

1   In a dry heated pan roast the rice flour for 4 minutes.

2    In a large pan boil 2 cups of water and to this add the rice flour forming smooth dough.

3    Remove from heat add 4 tsp of oil to this and knead to a soft smooth dough. Rest for 10 mins.

4     In another pan take ¾ cups of jaggery add little water and bring to a boil.

 Now add the grated coconut to jaggery syrup and stir until it forms a medium thick consistency.

      Remove from the heat and poornam is ready for stuffing.

      Now grease your hands with oil and start rolling out the dough between your Palms. Stuff the poornam inside and close tightly.

       Repeat the above process and steam your kolukattai in idli plate for 10 mins.

8    Yummy hot kozhukattai is ready to be served.
